Weekend Recap



Happy Monday! I hope everyone had a fantastic weekend!

My Honey spoiled me with beautiful flowers!



  We celebrated the love holiday at home Friday night with Gluten Free pizza. It turned out pretty good. I also made these yummy Paleo German Chocolate cupcakes. They were AWESOME!

 We exchanged gifts and Honey like his but I was a terrible gift receiver as I was not happy with any of the shoes Honey bought me :( I was so excited that he had bought me shoes but we just weren't able to connect with the style. Rats.

I also celebrated with one of these refreshing (gluten free) treats!



Saturday Honey and I set off for the Royal Palms resort for our couples stone massage. It was wonderful! We then spent some time beside the pool enjoying the sun and upper 70's temps.
After soaking up a little sun, we enjoyed lunch at Deluxe Burger and then came home for a quick nap. I then headed over to the salon to get a hair trim and a blow out for date night. I was not in love with the blow out.

Ummm...no. She just did sorta pin curls and then undid them. I'm thinking there should have been a lot of round brushing and a curling iron. Right? I hate my hair! I wish it was thicker like it was pre-pregnancy!

Saturday night we had a wonderful dinner at Pappadeaux. Oysters, filet and lobster - OH MY! I also let myself have 1 glass of wine.

My and my Honey. I was super excited to be in  a dress that zips and have it be a slightly too big size 8. Then I see this pic and I think - I look HUGE. I hate pictures! 

 We rounded the rest of our weekend with riding lessons for Sofia and some couch/tv time. PERFECT!

Happy Love Day

Hi Everyone! Happy Valentine's Day! I hope you and all of your loved ones are especially kind and caring to each other today.


That being said, I'm sorta feeling bad that I like making a big deal out of Valentine's Day. I like to make those around me feel extra special on that day and yes, I know you should show them every day - I do that too! I just like going overboard on that day!

Hi my name is Whitney and I LOVE Valentine's and all the cheesy Hallmark business!

Last weekend we had a party for Sofia and her neighborhood friends.

I started leaving little Valentine's around the house for Honey and Sofia earlier in the week.

I made heart-shaped pancakes for Sofia's breakfast today.

I got my nails done. Red. Of course.
I bring sinful donuts to my coworkers (and don't eat any).


I send funny mushy, lovey cards via text throughout the day.



I go overboard with treats for Sofia that I leave in her room in the middle of the night. This year: candy, a new rug for her room, some Breyer horse stuff, a stuffed dog, a Valentine's shirt and some sparkly boots.

Tonight we are eating at  home. Homemade gluten-free pizza and I am celebrating with 1 gluten-free hard cider.

Tomorrow night we are going out to dinner and before that I am getting a haircut and a blowout! Woo Hoo! I got a new red dress and a red shirt depending on how fancy I decide to get for our date.

Now as far as gifts, I'm not gonna lie, one of my love languages is "gifts." I work hard every day of the year keeping/getting myself in shape (for him and me :)), taking care of our home and all domestic responsibilities so I must admit, I like being spoiled extra special on this one day. Now, Honey spoils me all year, but he does go above and beyond on this day. I will admit, I had to coach him the first year. I'm sure this makes me sound horrible, but it is the truth. So today I received beautiful flowers and tonight we will exchange gifts. I know that he bought me several pairs of shoes, because I have already tried them on while covering my eyes, to make sure they all fit. See, I'm spoiled.

I bought him a cute little key chain from etsy, some specialty bbq spice rubs and a couples hot stone massage at a beautiful resort - which we will be enjoying tomorrow and I'm taking him out to lunch. So I try to spoil him as much as he does me!

Valentine's Party with Friends

This past Saturday, Sofia invited her neighborhood friends over for a little Valentine's Day fun. They did a few foam crafts, used some glue, decorated rose petal picture frames and of course, they decorated heart-shaped sugar cookies. She had a great time and it was just a little way for me to show her how special of a Valentine she is to me!

These cookies are Betty Crocker Gluten-Free sugar cookies.  I also picked up some (gluten-free) heart-shaped marshmallows.

Icing all over her teeth! Have you seen the new Betty Crocker Add-in icing? It's plain white icing and then you buy a packet of color/flavoring. I bought the bubblegum flavor to create pink icing! They all loved it!


Thank goodness for the $ Tree and all their V-day stuff!

Weekend Recap

Happy Monday! I hope y'all had fantastic weekends!

We had another low-key weekend. Since we are doing Whole30, we haven't been out to eat much so we spend more time at home.

Friday night Sofia had a friend stay the night so we were all just hanging out at home and enjoyed paleo chili for dinner. Pretty tasty and you don't even miss the beans!

Saturday I got up early and went to Orange Theory. After class, I got cleaned up and we went to Costco (ugh - does it ever cost less than $200), Barnes & Noble and then back home.

Sofia was invited to a friend's house for a sleepover, so Honey and I decided to go to the movies to see Jack Ryan. It was good, not great. Have you seen it? Thoughts? Before we went, we made chicken and shrimp curry over cauliflower rice! YUMMY!

Sunday Sofia had her second riding lesson. She is SO happy when she is riding! She was over the moon when her teacher let her trot! She did so good! I grew up riding my whole life so I am thrilled to share this with her!

After lessons, we hurried home to do our Super Bowl snack prep - all Whole30 approved of course! 

We had: 
  • fresh plantain chips and homemade guacamole
  • sausage stuffed jalapenos with guacamole on top
  • pork, pineapple and coconut meatballs
  • sweet potato fries
  • grilled chicken wings
  • bacon wrapped avocado
Everything was great - but the plantain chips could have been a little crisper. You can find all of these Whole30 recipes here. 

That pretty much sums it up. I enjoyed some of the commercials, but that game was a snoozefest!

Today is Day 30 of my Whole30 adventure!! I'll be back tomorrow with a full recount of the details!

Horseback Riding Lesson (thanks Groupon)

I recently bought Sofia a coupon for some riding lessons and yesterday was her first. She knows how to ride, but needs actual instruction. This was an awesome deal too! $59 for 4-60 minute lessons! Don't you love those internet coupon sites?







Winter Gymnastics Recital

Saturday Sofia participated in the gymnastics recital at her gym. It was a short performance (just a floor routine) but she had fun none the less. She has her first official competition coming up in March. She is very excited!




With her friend, Bailey. She is on the cheer team and an amazing tumbler. So of course, Sofia wants to do cheer next fall - I'm just fine with that!!!
