Great American Road Trip - Part 4

After we left the Grand Tetons, we headed to Yellowstone! We spent 1 night in the park and then headed out to Montana to spend a day fly fishing, rafting and zip lining ( that's Part 5).  This post is the eastern side of the park.

Dinner Made Easy - Salsa Shrimp

So I've mentioned before that I follow Atkins (for the most part) or very low carb because that is the only way I EVER lose weight. So I eat a lot of fish, chicken, turkey and shrimp. Well basically any kind of meat.

Shrimp is my easy go-to meal when Honey is traveling. So tonight I happened to notice a recipe on the bag. It was easy and sounded tasty!

Shrimp
Scallions
Salsa

Just cook the shrimp a few minutes in oil, add in the scallions and some salsa (enough to cover). Cook another minute or so and that's it! Enjoy with rice (if you can)!

Great American Road Trip - Part 3

The next part of our journey found us in Jackson Hole, WY and The Grand Tetons. By far I LOVED the Tetons the best! SO pretty and the park was very easy to get around in. We hiked a couple of beautiful hikes and also stayed at a wonderful camp ground (Colter Bay) and even swam in the ice cold mountain lake!!
